SketchUp (cracked Pro version optional, or the real deal if you have 600 dollars to waste), an object exporter plugin (the official one is named Skp2Obj.dll if you want to try a plugin search site, or you can try to find a Ruby script plugin that does the same thing, though it's buggier and you have to do triangulation your before exporting; whether by another plugin or by hand is up to you) is all you need for map editing. A texture database helps, as well, if you plan for the maps to look nice, but if you're doing a simple test it isn't necessary. spinout's porter and Python will do the job for importing your maps into Ocarina of Time. As for actually building models, I suggest you take a look at SketchUp's tutorial section to learn how to use the tools in SketchUp. Beyond that, experience is all I can recommend; map making is something that only you can teach yourself, hence a lack of tutorials. If you aren't willing to try to learn, then map making isn't for you.
