Hello,
does anybody know which software Nintendo used for level building in Ocarina Of Time (ZOOT) ?

Most probably it was a custom piece of software, so you'd have a hard time finding it. But there are plenty of community authored tools that allow for editing of levels.
Utility of Time (UoT) is an occasionally buggy level editor made by cooliscool, you should be able to find that easily enough. The Zelda Level Editor 2 (ZLE2) suite by jsa works by editing levels on the fly while in an emulator like Nemu with memory access and then saving to ROM. This is an excellent tool for immediately viewable results. Zelda Actor Placement Python (zappy) is spinout's level editor, and is the only (I think) editor that can modify waterboxes. OpenGL Zelda Map and Actor Viewer 2 (OZMAV2) is xdaniel's viewer, and can currently modify actors, though it does not yet support collision or gfx model editing.
